The truffle

About the world there are as many as 200 known truffle species. But the most common truffles we still find in Europe and especially many in Italy. Cheese Choice offers in its assortment different truffles: Black and white truffles. So this black truffle or too Tuber Aestivum occurs in different seasons with its characteristic appearance and flavors.

The different types of truffles

The black truffle

  • The black winter truffle has a dark skin and interior with a light veining. This truffle is considered the most delicate (among black truffles) and grows from November through March. This truffle is found in Umbria, southwestern France and Spain.
  • The black autumn truffle has a dark exterior and a light brown interior with a light veining. The flavor of the autumn truffle is slightly weaker than that of the winter truffle. The autumn truffle grows from September through January.
  • The black summer truffle is very similar to the autumn truffle, but its flesh is even lighter in color. Thereby, the taste is also slightly less strong. This truffle grows from May to August. The taste is milder and the smell is strong, pleasant and earthy.

The white truffle

The white truffle is another type of truffle called the "Queen of the truffles. This is the most precious truffle there is and is only rarely found in the regions of Piedmont to northeast of Rome(Appenines) between the months of October and February.

This Tuber Magnatum has different characteristics than the black truffle and even Vitro studies attribute anti-inflammatory properties, it is also rumored to have aphrodisiac properties. The appearance of this truffle is pale ochre yellow and can be light green and the taste is mild, sweet and slightly bitter with a hint of garlic. The smell of this Queen is strong and complex and can smell of methane gas, ripe cheese and garlic.
